The Ridge Behavioral Health System is seeking dynamic and talented Part-time Cook. Located in Lexington, KY, the heart of the Bluegrass, The Ridge Behavioral Health System offers a healing environment that is reassuring to a patients’ sense of security and confidentiality. Dedicated to excellence, The Ridge Behavioral Health System is accredited by the Joint Commission on Accreditation of Healthcare Organizations, as a licensed, 110-bed hospital, providing psychiatric (mental health) and chemical dependency (drug & alcohol rehabilitation) services to children, adolescents and adults. Inpatient care is provided on a 24-hour basis, seven days a week. Outpatient and partial hospitalization services are provided on a six-day per week basis, days and evenings. Position Summary:

 

The cook is responsible for the preparing and serving foods to patients and personnel.  All policies and procedures, menus, recipes and guidelines are followed to provide accurate quality and quantities of foods.  Particularly important is infection control/sanitation/safety standards as well as professionalism in demeanor, attitude and service to patients and staff.

 

When assigned to the late shift, may assume general supervision of the department though the dinner meal.  In occasional absences of director, may be responsible for department.

 

Position Specific Competencies:

 

  • Prepares meals as outlined on the menu prepared by Director.
  • Demonstrates competence in operating food preparation equipment to fry, boil, roast, bake, broil, mix and assemble food items.
  • Follows recipes and directions as indicated & approved by the Director.
  • Takes and records food temperatures at mealtime.
  • Begins to prepare various foods at appropriate times assuring meal is not over or under cooked and ready to be placed on the serving line at mealtime
  • Prepares “special diet” meals as indicated by the Dietitian &/or Director.
  • Assembles individual patient trays for delivery to the unit.
  • Covers labels and dates all suitable leftovers for storage.
  • Checks upcoming days’ menu and pulls needed items from the freezer to the refrigerator.
  • Prepares food for special functions.
  • Food is placed on the serving line on time.
  • Takes meal tickets from staff members, patients and visitors eating meals at the facility.
  • Is aware of appropriate food items to be served to patients and refers to clinical staff members when questions arise.
  • Assures there are plenty of eating utensils, trays, napkins, cups and any other items needed by customers of the cafeteria.
  • Takes down and clean serving line promptly after meals.  Stores items in a timely manner.
  • Follows sanitary guidelines as established by supervisor and regulatory agencies.
  • Washes pots, pans, dishes, trays and utensils promptly and thoroughly.
  • Checks water temperature to assure compliance with health and safety standards.
  • Sweeps and mops kitchen as necessary.
  • Properly cleans and sanitizes work area and equipment.
  • Takes and records temperature of equipment as required.
  • Promptly receives deliveries when notified of their arrival.
  • Follows correct procedures when putting delivered items in their proper storage place.
  • Effectively monitors the use of supplies and notifies supervisor when supplies are limited.
  • Demonstrates effective time-management skills; organizes work so that critical assignments may be completed promptly, accurately and thoroughly.

Job Requirements

 

Job Qualifications:

Education

  • High school diploma or equivalent recommended. 

Experience

  • One to two years of experience in quantity food preparation.  Some formal training or on the job training in food preparation, cooking, and estimating food supplies.

Certifications/Licensure

  • Must obtain a food handlers permit.

Other Skills

  • Must be thoroughly familiar with foods and preparation methods.

  • Must know proper methods and cooking temperatures.

  • Must be able to space and time the cooking of items so that their nutritional quality, flavor, and appearance are preserved.
