Description

Reporting to the Director of Professional Services, Complete Purchasing Services in Toronto, as a Culinary Development Associate Chef you will assist the Corporate Chef and Dietitian with the development and testing of CPS recipes to meet the International Dysphagia Diet Standardization Initiative (IDDSI) descriptors at the Aramark Culinary Centre.

 

Please note that is a part time contract opportunity working 3 days a week for 12 months with a targeted start date in January 2018.

 

Responsibilities:

  • Conducts recipe testing for texture modified diets as assigned by Corporate Chef to ensure applicability based on the descriptors of the IDDSI framework, provincial Ministry of Health nutrition guidelines, Aramark Canada Nutrition Standards and Canada’s Food guide for healthy eating
  • Develop creative solutions for texture modified recipes that do not meet the IDDSI descriptors for that specific diet type as well as stay within the parameters of CPS recipe cost and nutritional guidelines
  • Update documentation (testing spreadsheets, etc) as directed by Corporate Chef or Dietitian
  • Comply with all Aramark Culinary Centre Health and Safety Policies
  • Ensure recipe testing is completed according to project outlines and in accordance with specified time-lines
  • Ensure continuous coordination and communication with the Corporate Chef and Dietitian

 

Qualifications

The ideal candidate will have the following professional experience and skills:

 

  • Minimum of a 2-year Culinary Degree and possess a red seal designation as well as a nutrition or foodservice diploma. A Bachelor’s degree is desirable but not required 
  • Experience with recipe development including modified textured recipes, food presentation and creative skills that result in the achievement of business objectives 
  • Knowledge of the IDDSI framework is an asset
  • Culinary vision, a passion for food and a keen understanding of core culinary processes, procedures and systems
  • Knowledge of production capabilities in long term care is required
  • Attention to detail and ability to envision the implementation tools needed to successfully utilize a concept or brand at the unit level
  • Requires strong culinary math and recipe writing skills 
  • Computer skills including Microsoft Office, Food Production Management systems, recipe database software
  • Working knowledge of Computrition is an asset
  • Must be flexible in days required to work between Monday and Friday
