Job #70485 - Sodexo is seeking an Executive Chef (I) for The Blakeford at Greenhills in Nashville, Tennessee.  This is a 250 Resident Continuing Care Retirement Community located just minutes from downtown Nashville; Green Hills is one of the trendiest spots with the hottest locales in town. We provide 5 Star Dining Services for our Independent Living, Assisted Living, and Skilled Nursing, along with Food Retail venues, and Catering for special events.


In this role, you manage; food production for resident dining, retail venues, and catered events.  Responsibilities; supervision and training of 20 employees, inventory management and purchasing for 800K in volume, food quality and standards, safety and sanitation monitors for regulatory compliance, client, resident, and employee satisfaction.  Critical to your success in this position will be your; strong leadership skills, ability to train and hold staff accountable, sanitation standards that yield zero deficiencies with daily self-audits and all regulatory inspections, and your ability to comfortably move from back of house management to front of house as you mingle with the residents during daily meals and special events to look for an implement service enhancements.


Your Skills Check List for this opportunity;

Culinary Degree / Trade School Certificate and Servsafe Certificate

Senior / Fine dining experience in Restaurants / Country Clubs

Ability to manage inventory for a budget of 800K in volume

HR skills to train & develop culinary food production teams

Computer skills; food & labor management systems

Working knowledge of HACCP monitors for Regulatory Compliance

Menu Planning for resident dining, food retail and catering

Experience with quality standards for food production & service 

Dynamic leadership skills for outcomes that exceed client and resident expectations


Typical schedule; 8am-6pm with some weekends / holidays based on events.

Position Summary

Provides culinary leadership within a small sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution
Key Duties
-Executes the culinary function
-Customer & Client satisfaction
-Manages food & physical safety program.


Qualifications & Requirements

Basic Education Requirement - Associate's Degree
Basic Management Experience - 2 years
Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
