Unit Description

Sodexo is seeking an Executive Chef 2 to oversee culinary operations in one of four resident dining food service operations on campus at the University at Albany (UAlbany). UALbany is a growing campus dining account located in New York's capital region.
 

Reporting to the Campus Executive Chef, this Executive Chef is responsible for all food production systems within a large resident dining hall.  The passion to serve great food while managing food cost within budget is a must. Successful candidates must be highly organized and able to handle multiple tasks in a fast-paced environment.  Food safety, sanitation and organization are high priorities.  This culinary manager will also support various events held within the dining hall.

 

The ideal candidate will have the following preferred qualifications/experience:

 

  • Volume culinary management experience, preferably within a college/university setting.
  • Is committed to providing high level of culinary service with demonstrated success in team development.
  • Drives corporate standards focusing on food quality, presentation, and creativity.
  • Is technically competent with proven experience maintaining costs using food and labor systems and utilizing on-line systems to order and control inventory.
  • Takes responsibility for training and development of all culinary employees.
  • Possesses a strong understanding of food safety and HACCP standards.
  • Is an organized professional with effective leadership, communication, time management, and interpersonal skills.
  • Has a culinary degree.

Position Summary

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
Key Duties
- Implements & coordinates the culinary function. 
- Directs & trains cooks & utility workers.
- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
-  Manages food & physical safety programs.

 

Qualifications & Requirements

Basic Education Requirement - Associate's Degree 
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
