Unit Description

Sodexo is seeking a high performing Executive Chef 2 to utilize highly creative and extensive culinary background for the 350 licensed bed Billings Clinic in Billings Montana.

 

Reporting to our Operations Manager or General manager, the Executive Chef will lead the culinary team and will plan, organize and manage the daily food production in the hospital. 

 

Responsibilities include:

  • Managing food production including production planning and controls for patient dining, cafe and catering services
  • Ensuring Sodexo Culinary Standards including recipe compliance, food safety and food quality
  • Labor and food cost controls and compliance
  • Ordering and inventory management
  • Menu development 

The best qualified candidate will be food safety certified/HACCP knowledge, experience with ordering food and supplies, food production skills, ability to manage a team of 20 front-line staff, ability to control food and labor costs, catering experience, excellent client and customer interactions skills and the ability to work a flexible schedule that may include some evenings and rotating

Position Summary

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
Key Duties
- Implements & coordinates the culinary function. 
- Directs & trains cooks & utility workers.
- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
-  Manages food & physical safety programs.

 

Qualifications & Requirements

Basic Education Requirement - Associate's Degree 
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
