    Sodexo University Dining is seeking an Executive Chef 2 at Ursinus College in Collegeville, PA, just north of Philadelphia, Pennsylvania. The Executive Chef for this campus will be responsible for approximately $6 million in annual sales with 1350 student boarders. This business consists of a student residential board dining operation, several retail brands, catering sales of approx. $250K and new summer camp and conference business initiative.

    The Executive Chef will direct a culinary team consisting of a food production supervisor, up to three Sous Chefs, a pastry chef and hourly culinary staff as well as client paid student workers.

     

    We are looking for candidates who will:

    • manage the daily food production including production planning and controls;
    • ensure Sodexo Culinary Standards including recipe compliance and food quality;
    • manage food costing, controls and compliance;
    • develop menus and manage inventory;
    • have high expectations for customer service and quality of food;
    • have the ability and willingness to develop and train frontline employees;
    • have a passion for food and innovation;
    • have knowledge of special diets and allergens; and
    • knowledge of Sodexo Food Management System (FMS) is preferred.

     

    The ideal candidate has the following in their toolkits:

     

    • College/University culinary and culinary management experience
    • High end Catering culinary experience
    • A culinary degree and 3-5 years experience
    • Experience with food and labor management systems
    • Experience leading and training a culinary staff – emphasis on training and developing staff
    • Experience with on-line ordering systems
    • Excellent management skills with the ability to wear multiple hats
    • A strong attention to detail and a high focus on food presentation/menu planning
    • Excellent communication skills and front of house presence interacting with clients and student customers
    • Ability to make an immediate impact
    • Committed to sustainability and local sourcing of product

    Qualifications & Requirements

    Basic Education Requirement - Associate's Degree 
    Basic Management Experience - 2 years
    Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
