Unit Description

Sodexo is currently seeking a high-energy Executive Chef 2 at The College of New Jersey (TCNJ), located in Ewing, New Jersey. We are seeking a culinary professional with high-volume culinary management experience in a contract dining setting (campus/university dining strongly desired with a focus on multi-unit retail/restaurant and catering culinary operations).  Reporting to a Senior Executive Chef, the Executive Chef 2 will support the culinary food production for two food court operations plus the new "Traditions" table service restaurant on campus (up to $5M in volume).  This Executive Chef will all support catering food production.  Training, menu planning, food quality, food and physical safety, cost controls, hands on cooking and client/customer relations are a top focus for the Executive Chef and his/her team of Sous Chefs/staff.

 

Position will require flexibility with a varied scheduled as business needs dictate (some weekends/evening), but will in general work Monday – Friday.

 

The ideal candidate will have the following:

 

  • High-volume College/University culinary and culinary management experience
  • Retail and catering culinary program experience
  • A culinary degree
  • Experience with food and labor management systems
  • Experience leading and training a culinary staff (union experience strongly desired)
  • Excellent management skills with the ability to wear multiple hats
  • Experience with food safety and sanitation practices
  • Strong attention to food quality and presentation

 TCNJ’s Georgian Colonial campus occupies 289 landscaped acres in suburban Ewing, New Jersey. The College is approximately 5 miles from Trenton, the state capital, 10 miles from Princeton, and one hour from both Philadelphia and New York! 

Position Summary

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
Key Duties
- Implements & coordinates the culinary function. 
- Directs & trains cooks & utility workers.
- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
-  Manages food & physical safety programs.

 

Qualifications & Requirements

Basic Education Requirement - Associate's Degree 
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
