Unit Description

Sodexo is seeking an Executive Chef who has an understanding of sports-based culinary nutrition 

for collegiate and/or professional athletes!

 

The Minnesota Twins baseball organization is seeking an Executive Chef 2 for their Performance Nutrition program at the Player Development Academy in sunny Fort Myers, Florida. Are you an experienced and driven individual with proven ability to prepare high-quality, nutrient-dense meals and the principles of performance nutrition to fuel professional athletes?

 

The Academy is a 75,000+ sqft facility used to house baseball players while they’re in training/rehab in Florida. We’re located in the heart of Fort Myers and only minutes from the beautiful beaches of south Florida. We're ideally located for education, travel, internship and employment opportunities, as well as social and recreational activities. Responsibilities:

  • Organize, coordinate, prepare, and serve various meals to approximately 250 Professional Baseball Players, 25 coaches and 50 staff. Meals include 3 meals a day in addition to oversight of all-access snack and smoothie stations at Academy year-round.
  • Ensure that the food served follows MN Twins food & nutrition guidelines, is made from scratch, is minimally processed, and organic when available
  • Engage with players and staff through action stations, culinary education in partner with sports dietitian and regular engagement during meals
  • Will have creative control over the menu and recipe development, working with sports dietitian on nutrition analysis and product sourcing
  • Manages production planning, record keeping and reporting
  • Assists in the ordering and receiving of all food and supplies
  • Supervise, train and educate 10+ employees including 1 sous chef and 2 supervisors
  • Create and perform cooking demonstrations in partnership with sports dietitian with focus on baseball athletes needs during season
  • Keep up to date with current food trends, new products and emerging cuisines

Preferred skills:

  • Posses’ creativity, desirability to learn, and has uttermost respect for food and nutritions
  • Understands nutritional needs and preferences for athletic populations and cultural diversities
  • Full understanding and knowledge of culinary nutrition applications, and is able to adjust recipes and menu as deemed necessary to fit athlete’s nutritional needs
  • Experience working with clients who have food sensitivities and allergies, and will work closely with sports dietitian to provide nutritious meals to those athletes that have food allergies
  • Ability to prepare creative, simple, healthy, performance oriented menu items on a daily basis
  • Exceptional organizational, written and verbal communication

Our ideal candidate will have:

  • Bachelor’s degree in Culinary Arts, Nutrition, Dietetics, Health Science, or related field
  • A minimum of 3+ years of experience as an Executive Chef
  • A minimum of 1+ years of sports-based culinary nutrition experience with collegiate and/or professional athletes

Position Summary

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
Key Duties

- Directs & trains cooks & utility workers.
- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
-  Manages food & physical safety programs.

 

Qualifications & Requirements

Basic Education Requirement - Associate's Degree 
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
