Job #62791 Sodexo is seeking an Executive Chef (II) for Peconic Landing in Greenport, NY.  A beautiful waterfront location on the North Fork of Eastern Long Island!  This is a 250 Resident award-winning Continuing Care Retirement Community (CCRC) with Five Star Dining Services for residents in; apartments, assisted living, and skilled nursing care.  This position reports to the Chef De Cuisine on Campus.


Responsibilities; 50% hands-on cooking, training of the back of the house food production teams, financial management, managing food production systems and standards for Resident dining, employee café, and catered events. In addition you will oversee; monitors for food safety and sanitation, managing the menu & recipe cycles with a focus on wellness & diet options, assisting in high end catered events, providing strategic analysis and solutions to product cost and food productions systems, enthusiastic leadership and exceptional organizational skills for an employee and customer centric environment.  Your ability to maintain high customer service outcomes, computer literacy, and excellent leadership is critical for this position with the primary focus on driving food quality and culinary innovation in all aspects of production and service in a professional environment.


Ideal Candidate Skills, Certification:

Culinary Degree / Trade School Certificate and Servsafe Certified

Food management experience in healthcare / contract management

Inventory management for a budget of 3.5 million in financial volume

HR skills to train & develop 50 employees

Detailed knowledge of HACCP and Department of Health Regulations

Culinary background; food production, recipes, and quality standards

Menu Planning for Fine Dining, Food Retail, and Catering

Computer skills; financial, food, labor, menu graphics, catering software  

Dynamic leadership skills to maintain the highest level of client and customer expectations


Schedule varies with rotating weekends / holidays

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.


Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
