 Seeking an Executive Chef 2 for a long tenured account located at Hanover College!

Sodexo universities segment is seeking an Executive Chef 2 for our long tenured account at Hanover College. Hanover College is a premiere, private, liberal arts undergraduate college, located in beautiful Hanover, Indiana, near the banks of the Ohio River. As our Executive Chef, you will oversee culinary of a $2.5 MIL campus food service account that has a student population of over 1,000 of which 700 are on a meal plan.  There are three retail venues to compliment the resident dining hall. Average catering revenue of over $300 - 375K annually.  Reporting to the GM, this position will oversee up 25-30 Sodexo associates and 1 hourly supervisor.  Responsible for culinary operations of the resident dining services and some retail operations.

 

Responsibilities to include:

  • ordering for resident dining and catering;
  • financials to include: inventory, food and labor controls;
  • safety & HACCP compliance for all employees;
  • HR functions to include training and scheduling;
  • overall appearance of food for Residential and Retail dining;
  • menu selections and recipe compliance;
  • ensuring student and customer engagement and client satisfaction;
  • oversees the catering production process from planning menus to the production of menus and innovative displays for events.

Position Summary

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
Key Duties
- Implements & coordinates the culinary function. 
- Directs & trains cooks & utility workers.
- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
-  Manages food & physical safety programs.

 

Qualifications & Requirements

Basic Education Requirement - Associate's Degree 
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
