    Sodexo Leisure has an exciting opening for an Executive Chef 2 to join our dynamic team at the National Aquarium in Baltimore, MD.

     

    Key Responsibilities:

    • Managing multiple retail food outlets & very high end, high volume special events
    • Creative menu development with focus on sustainability and conservation and understanding of food trends essential. 

    You have/are experience:

    • Extensive culinary experience with high-volume retail and catering in a similar cultural destination venue 
    • Managing culinary production for retail & catering operations in multiple, diverse, fast-paced venues
    • Utilizing locally sourced, organic and sustainable practices is a plus
    • Developing menus and overseeing operational standards for retail & catering operations
    • Responsible for purchasing, compliance, inventory, cost analysis and forecasting
    • Knowledgeable of food (FMS) and labor (KRONOS) management systems 
    • Ensuring compliance to food safety, sanitation and workplace safety standards
    • Comprehensive knowledge of current retail culinary trends is necessary
    • Excellent communication skills and the ability to manage multiple priorities are key to success in this role
    • Flexible schedule in order to work varied shifts as dictated by business needs

    Position Summary

    Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
    Key Duties
    - Implements & coordinates the culinary function. 
    - Directs & trains cooks & utility workers.
    - Ensures food preparation & production meets operational standards.
    - Manages catering & retail areas.
    - Customer & Client satisfaction.
    - Financial management to include food cost & labor management.
    -  Manages food & physical safety programs.

     

    Qualifications & Requirements

    Basic Education Requirement - Associate's Degree 
    Basic Management Experience - 2 years
    Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
