    Job #71731 - Sodexo is seeking an Executive Chef (II) for The Amsterdam at Harborside in Port Washington, NY; East Meadow of Nassau County; Long Island, New York. This is a 340 Resident Upscale Continuing Care Retirement Community.


    Do you have the following background and competencies?  Fine Dining Restaurant experience, an innovative culinary expert who keeps ahead of industry trends, the ability to implement and enhance programs and systems, strong communication skills, the capability to smoothly navigate from back to front of the house while effectively training employees to produce amazing meals that will delight our Residents & Guests?  If so, we would love to hear from you! 


    In this role, you visit with the Residents daily during meal service and actively engaged in community activities while overseeing catered events.  This is a customer service driven environment for a dynamic individual with a passion for people and boundless energy for details that distinguish high service level standards second to none in the industry.  Critical to your success in this position is your ability to manage the food & labor budget and control costs along with your passion for training employees on culinary techniques that will produce remarkable dining experiences. 


    Your Skills Check List for this position:

    Culinary Degree / Trade School Certificate and Servsafe Certified

    Senior Fine Dining, Contract Food Service Management experience

    Working knowledge of HACCP protocols for regulatory compliance

    Food production, meal presentation, catering with attention to detail

    Experience; inventory management & on-line ordering for 2M in volume

    Experience creating and developing menus and pricing

    Skills to train & develop 60 employees; food production & utility

    Ability to manage multiple and at times, competing priorities

    Computer skills; food and labor management systems, Menu Graphics

    Food and kitchen safety training of staff and self-audits for standards 


    Schedule will vary with d weekends & holidays

    Position Summary

    Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
    Key Duties
    - Implements & coordinates the culinary function. 
    - Directs & trains cooks & utility workers.
    - Ensures food preparation & production meets operational standards.
    - Manages catering & retail areas.
    - Customer & Client satisfaction.
    - Financial management to include food cost & labor management.
    -  Manages food & physical safety programs.


    Qualifications & Requirements

    Basic Education Requirement - Associate's Degree 
    Basic Management Experience - 2 years
    Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
