Unit Description

Sodexo is seeking an Executive Chef 3 for New Mexico State University, in Las Cruces, New Mexico!  NMSU is about 45 minutes away from El Paso, TX and about 3 hours south of Albuquerque, NM. At NMSU we offer Resident Dining (900 students on the meal plan), Catering, Retail, and concessions. We are looking for an exciting candidate to be the face of Sodexo Culinary program - to execute the culinary planning, train and mentor culinary staff and to engage with students and be part of the campus community.

The successful Executive Chef will have prior experience managing high volume/fast paced college or university culinary operations encompassing resident dining programs, catering, and retail food service.  This Executive Chef will join a team of 5 Directors and oversee a culinary staff of 75 Sodexo employees that provide outstanding residential dining, elegant catering, while enhancing client program objectives.  

 

The successful Executive Chef will have experience with, and proven results in, the following areas:

 

Leadership: Ability to effectively manage and communicate with Culinary Staff, Key Personnel, Catering Staff and Management Teams along with a passion and dedication to be “one of the best”. Candidate must be highly engaged and extremely hands-on in day to day operations.

 

Training: Must be able to articulate and demonstrate a wide ranging variety of cooking techniques and skills for the staff (plate presentation, quality, safety, proper culinary techniques).

 

Financial: Ability to manage and demonstrate proven results with food costs, labor and controllable expenses.

 

The ideal candidate will have:

  • Large scale College/University culinary experience;
  • Strong culinary background with experience in catering and banquets;
  • Emphasis on food presentation, quality, execution, menu design & implementation;
  • Focus on customer service excellence;
  • Demonstrated experience providing strong leadership, including supervision, direction and training, to a diverse team of employees;
  • Focus on food and physical safety and sanitation;
  • Experience managing food and labor cost controls to meet targets;
  • Understanding of food allergens and special dietary needs;
  • Strong understanding of financials as well as strong analytical skills.

Responsibilities for this culinary leader's role will include VIP catering menu planning, client interaction, food forward presentation skills, food prep, inventory management, purchasing, food & labor costing, scheduling, safety/sanitation & employee training. This position will also have direct customer and client interaction.

Position Summary

Provides culinary leadership within a large sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution.

- Ensures food preparation & production meets operational standards.
- Manages catering & retail areas.
- Customer & Client satisfaction.
- Financial management to include food cost & labor management.
- Manages food & physical safety programs.
 

 

Qualifications & Requirements

Basic Education Requirement - Bachelor’s Degree 

Basic Management Experience - 3 years   

Basic Functional Experience - 3 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
