Sodexo is seeking a Health, Wellness and Sustainability Manager (Food Operations Manager 1) for University of Denver, in Denver, CO.  Sodexo’s partnership started with the University of Denver in 1994. This Health, Wellness and Sustainability Manager will lead a dedicated work force in providing high quality and diverse services including nutrtion, healthful lifestyles and awareness of sustainability to campus.  


The Ideal candidate will have:

  • Provide leadership and strategies that will contribute to the development of quality and innovative nutrition and sustainability education programs.
  • Lead the effort to create a sustainability vision for the campus encompassing people, profit and planet. Develop the business case to address sustainability issues.
  • Serve as the internal leader and “go to” expert for sustainability, monitoring emerging trends, programs and issues, and communicating and educating others on sustainability topics.
  • Provide nutrition counseling and evaluation to meal plan holders, guests and conferences eating in dining operations.
  • Ability to work with diverse constituents and students to develop their leadership skills and understanding of healthy nutrition and sustainability.
  • Bachelor's Degree or equivalent required. Study in environmental science, food science, nutrition or related field. Registered Dietitian preferred.
  • Excellent customer service, communication, and interpersonal skills.

The job responsibilities for health, wellness and sustainability manager:


Student Support

  • Nutrition Assessments and Counseling to meet with students individually to assess the diet and health-related lifestyle of registered students who have requested or have been referred for an assessment, including nutritional assessment of diet when applicable. Nutritionist will maintain a referral list with the college for students requiring more long-term nutritional counseling.
  • Special Diet Requests – nutritionist will follow college protocols to support students with special diet needs and/or medical accommodations. When needed, the nutritionist will work with the college to establish and maintain campus protocols related to ADA compliance for special dietary needs.
  • Maintain open communication system with campus resources (student health services and/or office of disability services) and with students (including direct contact with students, parents), and directing student questions and referrals.
  • Individual recommendations are based on current nutritional science. 

Supervision and Staff Development

  • Menus - works with managers and supervisors to ensure that foods are identified properly
  • Develop and implement training to support food allergy and wellness protocols onsite for management and hourly teams.
  • Participate in investigation and/or planning corrective action when applicable. (e.g. a reported food allergen exposure).
  • Work with staff to implement a Sodexo Mindful program.
  • Work with the Executive Chef to ensure that all meals are nutritionally balanced, varied and appealing to the senses and meet Sodexo’s Better Tomorrow Plan commitments.

 Program Development and Implementation

  • Plan and implement an annual wellness calendar of events specifically for assigned campus.
  • Attend and present at designated campus events.
  • Provide nutrition-related workshops for groups, upon request.
  • Nutritionist will be involved in supporting all critical steps in recipe testing/entry/approvals, accurate entry into manager and overall integrity of the program. Conducts designated menus reviews in specified timeframes.
  • Oversee the department, creation and implementation of nutrition-related programs. Enhance and coordinate nutrition promotions, individual counseling services to students with meal plans and groups eating in operations.
  • The position will work to ensure that all areas of oversight meet the demands of the University community while also promoting our vision and values. Expected to develop and build our academic relationships with numerous divisions, campus and community constituents. Track student nutrition success with metrics to evaluate Denver Dining nutritional programs.
  • Provide interactive table topics that are educational and help students to recognize the benefit and usability of a nutritionist on campus
  • Create teaching opportunities with Housing and Residential Education working with the resident advisors to do focus groups, cooking demonstrations and training on healthy eating. 

Collaborate with DU Sustainability office to achieve goals as outlined in the Sustainability Policy.  Act as chairperson on the Food Sub -committee developing the food sustainability policy for the university and manage the measurement statistics to report to the university.

  1. Develop, initiate and help manage on-site operating procedures and outcomes for:
    • RFC invoice transfer system to students (developed at DU). Sodexo is the only company who has signed an agreement with the national, student run, REAL Food Challenge organization.
    • Solidify proper internal Sustainable Food/RFC audit to accurately record RFC/Sustainable Food purchases in juxtaposition to the student audit
    • Asses and aid student process for the RFC audit
    • Help determine whether accurate labelling is occurring and help implement sustainable food labelling program (developed at DU).
    • Initiate and assess served Plant-Based Recording Procedures
    • Collaborate with Regional and Senior Sustainability Staff to determine current use and increase of sustainable food products
    • Develop a synergistic Waste Diversion, Food Waste Tracking and Reduction Employee Engagement/Training Program based off Sodexo Better Tomorrow best practices and participatory research at DU
    • Aid, help, develop and initiate Food Waste Reduction Oversight Procedures and Strategies with existing and/or non-existing Food Waste Tracking Programs
    • Aid in collation of Food Waste Statistics and help determine Reduction Metrics for Sodexo at the unit and regional level engaging students on reducing plate waste.
  2. Support National RFC and Better Tomorrow Initiatives
  3. Represent Sodexo at important cross-sector events related to Nutrition and Sustainability.

Position Summary

Provides leadership and supervision for the on-site food service exempt and non-exempt level staff in the delivery of our contractual agreement with the client. Provides supervision for food services at account/unit to ensure client satisfaction and retention for the company. Implements business practices in order to uphold company mission, values and commitments made in the Sodexo client contractual agreement.
Key Duties
- Establishes a safe work environment

- Utilizes Sodexo tools and programs to develop client, customer, and staff relationships,  to ensure account retention

- Implements and fully utilizes all Sodexo tools and programs to ensure financial outcomes

- Directs daily operations of food service to ensure employees have appropriate equipment, inventory and resources, ensures operating standards and regulatory requirements are met

- Develops and implements plans, projects, with defined objectives, methods, timetables and budget to support client and Sodexo strategic plan

- Ensures adherence to all HR standards for Sodexo, client, and  regulatory agencies



Qualifications & Requirements

Basic Education Requirement - Associate's Degree
Basic Management Experience - 2 years
Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
