Unit Description

 

Sodexo is currently seeking a Food Production Manager 3 to join our team at Disneyland Resort Cast Dining in Los Angles, California. The unit is a high-volume, fast-paced retail cafe with brands and a commissary kitchen servicing Disneyland employees open 24/7 & 365 days a year. Responsibilities will include: menu planning, food preparation, inventory, purchasing, food and labor costing, employee training, safety and sanitation guidelines, and management of up to 20 hourly union associates to include supervisors and hourly associates. The position will require flexibility in scheduling: shift could be weekdays, nights and weekends.

 

The Food Production Manager 3 will be responsible for:

  • Overseeing all food production in the kitchen
  • Organizing and managing kitchen staff
  • Controlling inventory/waste
  • HAACP logs
  • Ordering & managing food production
  • Training staff and ensuring recipes are follow 100% to guidelines
  • Ensuring compliance with Audits 

The successful candidate will possess a strong working knowledge of food safety and sanitation guidelines as well as excellent leadership, communication and customer service skills. Must be willing to work a flexible schedule.

 

This position will be responsible to ensure the highest level of client satisfaction through exceptional execution and delivery of the food service operation.

Position Summary

Responsible for inventory management and procurement of food and supplies at an account/unit to ensure client satisfaction and retention for the Company.  Manages food production through kitchen staff in a large facility. Contributes to account revenue and operating profit contribution through cost containment and safety. 
Key Duties
- Utilizes Sodexo resources, recipes, systems and programs to direct daily operations including; food production, inventory, product deliveries, invoices, and procurement operations.

- Ensures employees have appropriate equipment, supplies and resources to perform their job, and meet goals, cost controls and deadlines as assigned.

- Establishes and maintains a safe work environment including both food and physical safety in order to comply with all regulatory and Sodexo standards

- Complies with budget requirements by controlling costs (i.e. labor, inventory, equipment, materials) and making adjustments when necessary

- Supervises employees by delegating, assigning and prioritizing activities, and monitoring operating standards
 

 

 

Qualifications & Requirements

Basic Education Requirement - Associate's Degree
Basic Management Experience - 2 years
Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
