ARAMARK Remote Facilities is searching for a Food Production Manger to oversee the day to day kitchen operations in a remote facility in Cochrane/Timmins. Reporting to the Operations Manager, the Food Production Manager plans, administers and directs all unit activities related to food production operations, complying with the standards established by Aramark, regulatory agencies and client. Leads food production staff. Establishes and maintains effective working relationships with other departments to provide a unified food service experience for camp personnel and employees. The rotation for this role is 10/4.
Delivers strong operational performance by executing against Aramark and regulatory agency standards and programs, continually monitoring operations, and completing assessments and necessary action plans to provide optimal food quality and meal service.
Drives patient and customer satisfaction, and maintains client relationships through rounding.
Ensure all food is consistently prepared and presented according to the vision established and agreed upon by the Operations Manager and the Client.
Ensures compliance to food safety, sanitation, and overall workplace safety standards.
Train and oversee staff to ensure safety and sanitation in food preparation areas o Ensure all equipment is kept clean and in good working condition
Supervises, staffs, trains, conducts applicable rounding and manages the performance of the kitchen staff regarding food presentation, quality, texture monitoring programs, cost control and food safety and sanitation.
Manages and controls resources and materials to ensure quality, adequacy of supply and cost control within budgetary guidelines.
Responsible for managing the process of purchasing, receiving, scheduling, inventory control and managing food production activities in compliance with ARAMARK food production systems.
Assist in menu planning, grocery order/purchasing and control, pre-costing and post-costing.
Communicate effectively and frequently with staff to give feedback about work performance and to convey necessary information about menu changes, guest meal counts, inventory updates, and procedural changes.
Complete staff evaluations
Five or more years progressive professional cooking or catering experience required, including two or more years supervisory and/or management experience in the culinary field
Professional Cooking Designation (Inter-Provincial Red Seal Certification) is a must
Professional culinary training desired B.A. or B.S. considered an asset
Individuals with experience from remote operations or large scale catering/production environment will do well in the role
Fast paced kitchen environment preparing a minimum of 1000-meals per day
Knowledgeable of food production systems desired
Ability to communicate (both verbal and written) effectively with clients, customers and support staff.
Requires management and leadership skills in addition to good planning and organization skills. Position requires the ability to work with confidential employee, client and Aramark information. HACCP training desired.
Computer literacy: Microsoft office, willingness to learn Basic accounting experience
