Description

Working closely with the Residence Dining Manager and reporting directly to the Executive Chef, the Sous Chef will oversee all activities of cooks and other kitchen personnel engaged in preparing and cooking foods.  This includes the production of all hot and cold food items, in addition to managing and training all culinary personnel in a high volume, seven day a week operation.

Qualifications

  • 5+ years experience in culinary field or comparable role
  • 3+ years experience with high volume production cooking
  • Red Seal certified
  • Completion of recognized culinary program
  • Owns own culinary tools
  • Extensive knowledge of food handling and sanitation standards
  • Advanced FST training an asset
  • Basic FST required
  • Strong communication and team building skills
  • Experience with scheduling and hiring
  • Inventory management and ordering skills
  • Proven ability to multi task
  • Flexible hours including nights and weekends
  • Ability to stand for long periods of time and weather extreme temperatures (ovens/freezers)
  • Capable of working in environment where noise levels can be high at times
  • Able to lift up to 50lbs and push/pull up to 100lbs
  • Understands conversions in order to prepare menus and recipes correctly
  • Able to work under pressure/attend to deadlines
